Fried pizza with peeled tomatoes and buffalo mozzarella
Pizza Fritta is a Naples specialty enjoying a cult status amongst the locals. In Naples It is made by sealing the toppings between two layers of pizza dough and frying it in hot oil until it becomes golden and crispy.
In our version, which is also sometime called "Pizza Fritta Montanara" , to make the dish, chefs drop a disc of uncooked pizza dough in hot oil for about a minute, then add the puffy fried dough with the topping.
